Tomato & Pesto Breakfast Omelets

Made these yummy Omelets for breakfast today! It was my first time. 

Recipe:

1 tbsp olive oil & 1 tbsp balsamic

 Handful of grape or cherry tomatoes, halved

4 eggs/egg whites added


2-3 tbsp pesto


Salt and pepper - I added a little garlic salt for flavor. 

Add 1 teaspoon of olive oil to an 8-inch cast iron (or non-stick) pan over medium heat. Once hot, add the tomatoes to the pan and sprinkle with salt and balsamic. Let cook for about 12-18 minutes, turning them over every few minutes until the liquid has mostly cooked off and they look caramelized. Place tomatoes in a bowl and set aside. 

Reduce heat to medium-low and let the pan cool down for a few minutes. Add in remaining oil or whatever spray you prefer. Whisk the eggs for about 30 seconds. Pour eggs into the pan and swirl around to evenly distribute. It should sizzle a bit. You want the eggs to cook slowly. Let the eggs cook without stirring for about 2 minutes, until the edges and bottom start to set.

Once the omelette starts to set, gently lift up the edges with a spatula and tilt the pan towards that edge to help some of the uncooked egg run beneath. Let cook until it's golden about 2-4 minutes. Put a dollop the pesto on one half of the omelette and sprinkle the same half with roasted tomatoes.

Using your spatula, loosen the edges of the side with no toppings and carefully fold it over to cover the toppings. This should be very easy if your pan was greased well. Let cook 1 more minute then slice in half and serve immediately. Top with salt and pepper as desired. You could top with Parmesan too. I added a few more tomatoes and a little pesto on top!

Costco Favs

Being a Mom

As I sit and stare at my 2 beautiful boys. I can't help but think how perfect they are. There big brown eyes, perfect lips, cute little noses, perfect little laughs and they give the best hugs. I am thankful everyday to be a momma to them. I am thankful for our fun days, our adventures, long nights, wild times and all the love they show me.

DIY Valentines wreath

I have loved making crafts this last year. Its my go to therapy thing lately. It's so fun to make holiday crafts to add to your decorations. I made this cute valentines wreath this last week. I found all of my supplies at Joanne's fabric. That store is amazing. I love it. 
I loved making this wreath!! I thought it was super easy and very affordable. Win win! 
What is needed:

1 hay wreath. Keep it wrapped.
2 packs of precut banner triangles or you can make your own. 
2 packs of alphabet stickers 
2 rolls of valentines wire ribbon to wrap around wreath.
1 ribbon to use for hanging. 
Ribbon or string for banner 
Glue gun / glue sticks
A bunch of flowers 

Directions 

1-- wrap wreath with your favorite holiday ribbon. I would put a drop of hot glue every now and then as I wrapped. That way it secured my ribbon.
Wrap until completed.
2-- string banner.
3-- hot glue flowers however you like.
4-- put banner on with a little hot glue.
5-- add extra ribbon for hanging. 
DONE! You have a cute new wreath!

Christmas Eve Asparagus Soup

In the Correa family every Christmas Eve my mother inlaw makes asparagus soup! It is amazing!! It's a tradition from her family. This year we didn't have it on Christmas Eve. So I made it on New Year's Day for a family dinner with the Arhets family and Correas! It was my first time making it. I was so nervous. But it was amazing!!! Even my mother in law approved. It was a great night with amazing food and fun!! I will continue to make this every year and pass this tradition on to my children !! Xoxo 

Correa- (Foz) family Asparagus soup
Christmas Eve tradition 

2 stocks of fresh asparagus 
4 cans of chopped asparagus 
6 cups of chicken broth - I used water and chicken bullion cubes. 
1 onion chopped 
1/2 stick of butter 
4 cups whipping cream 
Salt/pepper to taste.


Wash and chop up fresh asparagus . Set aside in a bowl. 
Cut off asparagus heads and set aside. - sauté after with sea salt and pepper. 
Chop onion. 
Take chopped asparagus pieces, (not the heads) chopped up onion and butter and sauté in pan. About 10 mins. 
Put chicken broth to cook. Add onions and asparagus after done. Add 3 cans of asparagus . Put lid on and let cook for about 15/20 mins. 
Take off stove and use Emerson blender . Blend all up . Put back on stove. On 4/3. 
Taste-- add more water, whipping cream, salt/pepper if needed. 
Add last can of asparagus and asparagus heads. Let it simmer on low till warm.
 Add more asparagus heads to garnish . 
Serve with rolls. Enjoy!!
